Photo Makeover: Red Quinoa & Broccoli Salad with Almond Honey Vinaigrette

It always brings a huge smile to my face when I receive emails or comments from folks who have tried one of my recipes and enjoyed the end results.  We food bloggers put a lot of ourselves out there for the world to read, and aside from the personal and financial struggles I share with all of you, the majority of the recipes I share are my own creations.  And while I may like what I make for myself (I’d better… I’m the one who has to eat it, hahaha), getting positive reader feedback on the recipes I do end up sharing is beyond gratifying.

My Red Quinoa & Broccoli Salad with Almond Honey Vinaigrette is one example of a dish that is both a personal favorite and a reader favorite.  Some Facebook fans have even been gracious enough to dub this “the best salad ever” and while some may argue there are better salads out there, I have to agree that this one is pretty darned awesome.  Red quinoa is tossed together with crunchy broccoli florets, stir-fried tofu and crisp red onions, then drizzled with a generous amount of one of my favorite dressing creations: an almond butter & honey vinaigrette.  It’s packed with protein & fiber, rich in nutrients, and heavy on flavor & textures, making this one of my favorite salads to enjoy any time of the year.
