Recipe: Breakfast Burrito Pizza

Recipe: Breakfast Burrito Pizza is great for breakfast, lunch or dinner. It only takes a few minutes to whip up and is super easy to do. Try and enjoy this flavorful pizza!

Like many folks, when the weather is cold I like to turn on the oven and warm up by doing some baking.  Today’s dreary gray skies and constant rain made it the perfect day for that sort of thing, and I’ve spent it happily baking and canning and being a general Suzy Q. Homemaker.

But since I’m trying to be better about having breakfast on weekends (I’m so good during the week, but on weekends… Breakfast Fail!), I figured I should make a proper meal before spending the day around baked goods and jam.  I had a random craving for a breakfast burrito, but didn’t have the money or desire to go to my nearest taqueria to get one.  Nor did I have the appetite for one of those massive torpedoes of breakfast-y goodness!  I know breakfast is the most important meal of the day and all, but I seriously doubt that means it needs to include a metric ton of food at 8am.

After checking things out in the fridge, I was happy to note I had all my favorite burrito fillings anyway, as well as the good fortune to have one of my good flour tortillas left.  Take that, taqueria!  I would make my own darned breakfast burrito!  I would just keep my version unwrapped to keep things a little lighter.  And so the breakfast burrito pizza was born.

There are many things I like about this random little breakfast delight.  It’s takes only a few minutes to prepare, looks fantastic, and is a bit lighter than an actual burrito.  Since we’re sprinkling small amounts of toppings on a “crust” rather than stuffing massive amounts of filling into a giant flour tortilla, a lot less of everything is used.  It’s also extremely versatile and can be customized according to personal taste.  I used eggs, homemade seasoned black beans and ham as my main toppings, but bacon or chorizo (or just the beans) would be just as delicious.

It’s truly the best of both worlds, combining all your favorite burrito fillings with the lightness of a thin crust “pizza”.  Don’t let the smaller portion fool you, though!  This is very filling, and can actually be eaten as two separate meal.  And it’s less than $2 per pizza, making this an affordable, fun little breakfast.  What’s not to love?

Breakfast Burrito Pizza (makes 1 pizza; total cost: $1.85)Ingredients:
1 whole wheat or flour tortilla
1-2 large eggs
1/4 c cooked black beans
1/3 c shredded pepper jack cheese, divided
2 t hot sauce (Valentina, Tapatío, etc.)
1 T chopped scallions
1 t chopped fresh cilantro
2 T jarred salsa
2 T chorizo or chopped ham (optional)

Directions:
1.  Preheat oven to 350°
2.  Spoon the hot sauce onto the tortilla and spread just up to the edge of the tortilla (this is your “pizza sauce”)
3.  Sprinkle half the cheese and the black beans onto the pizza and place directly on oven rack for about 4-5 minutes, until the cheese has started to melt and the tortilla starts to get crispy.
4.  While the pizza is baking, quickly scramble the eggs in a small skillet.
5.  Remove pizza from oven and top with the scrambled eggs & ham.  Garnish with salsa, chopped scallions & cilantro, and enjoy!
