It has been one crazy week! I started a new part-time job (yay!), had articles to work on, and launched the Kickstarter campaign for the PGEW book, which is a big enough task to manage on its own! But as busy as life has been, it’s been a “good busy” for sure.
In my 2.5 seconds of free time, I noticed that my stats were reflecting a significant increase in one of my posts from last year, and it dawned on me just how busy I was. If it weren’t for the fact that so many folks have been googling last minute Easter menu ideas, I would have quite literally bumped into the holiday this Sunday.
Easter already?! And Mom’s birthday and everyone else’s (because in Kimberland, April is the month of Everyone I Know Is Having A Birthday Right Now)? And Mother’s Day is just around the corner?! Dude. Just how quickly can time fly in 2012?
Anyway, if previous years of posting tasty, yet affordable menu ideas have shown me anything, it’s that I am not the only one feeling this way (okay, you’re probably not worrying about my mom’s birthday present, but you know what I mean). These holidays can sneak up on us, especially those like Easter which never come around on the same date.
So from one panicked procrastinator to all you others, and even to those who are prepared but might have room for other dishes, here are some last minute menu ideas for your Easter brunch or dinner. You can drool over the slideshow above and click on your favorite shot to go to the recipe, or check out the list below. As usual, you can mix & match to create your own awesome menu. :)
Strawberry Panzanella Salad
Roasted Red Pepper & Tomato Soup with Polenta Croutons
Herbed Chicken Crepes with Fresh Rosemary Cream Sauce

Roasted Asparagus & Baby Carrots with Chive Butter
