In the past, when there have been just two days left ’til Mother’s Day, I’ve found myself scrambling to put the finishing touches on whatever special menu I’ve planned for me mum. For many reasons, we’ve had to postpone our culinary Mom’s Day celebration by a couple of weeks this year, but that doesn’t mean I’m not in planning mode!
And you might be, too, especially if you’re looking for something different & affordable to do for the most important lady in your life. Flowers and spa packages and elaborate brunches at fancy restaurants are all wonderful gifts, and back in the day when I could afford stuff like that, my mom was the lucky recipient of that sort of thing. But over the past few years, I’ve noticed she gets a lot more enjoyment from a specially prepared meal planned just for her. She also appreciates the fact that I didn’t go out and spend extra money on something that she probably didn’t need anyway. It’s awesome to put that huge a smile on her face, and I’d like to help give your mom a similar happy grin, and help you save a bit, too.
Since the last menu planning slide show did quite well, I think I’ll stick with that format from now on. Each photo will link to the corresponding recipe post (‘cept for the older ones that don’t turn up well in slide shows), and I’ll also list the titles below. As always, feel free to mix & match, or add some of your own mom’s favorites to the mix!
Cinnamon-Apple-Raisin French Toast (a.k.a. My Birthday French Toast)
Baked Eggs, Ham & Asparagus in Tomato Cups
Roasted Asparagus & Poached Eggs on Toast
Cream Cheese & Kumquat Marmalade Muffins
Spring Veggie & Meyer Lemon Brown Rice Risotto
Warm Shrimp, Quinoa & Spinach Salad
Steak & Zucchini Stuffed Portabellas
Poached Tilapia with Strawberry-Pineapple Salsa
Gnocchi Salad with Garlic-Feta Dressing
Chicken Farfalle with Mushrooms & Chives
Butter Lettuce, Fresh Cherries & Scallions with Chardonnay Vinaigrette
Hope you & your mom enjoy your time together this weekend! Next up: a brand new recipe to help usher in summer a wee bit early. : )
