Today’s photo makeover is one I’ve wanted to do since I posted the actual recipe back in 2009.  In fact, I’m still kicking myself for having posted the recipe with such a crappy photo because that is NOT how I like to do things around here.

But sometimes even I get caught up in the must-post-something-today-or-else category.  It happens to the best of us, though we should know better.  After all, the results of choosing quantity over quality can be painfully apparent.

Fortunately, there are some areas in life that will allow for do-overs, and this is one of them.  There is nothing about this dish that warrants the horrifying photo which used to accompany the recipe, and I’m making sure justice is finally served. 

Rather than roughly cut tomatoes haphazardly thrown onto a plate with some corn and a pitiful attempt at a frisee garnish, we now have lovely, properly cut tomatoes, fresh corn, and proper lighting.  And what a difference those few things can make!  

This is a lovely little dish that works as well as an entree as it does as a side, particularly when served atop of brown rice or quinoa.  It takes pretty much zero effort to prepare and makes great use of those late-harvest tomatoes so many of you are still enjoying.  And it’s the perfect side to enjoy alongside some of your other favorite dishes during Unprocessed month when prepared with fresh corn.  What’s not to love?
