Use a paper towel to pat boneless skinless chicken thighs dry then remove excess fat. Add the onion powder, garlic powder, herbs, salt, and pepper to a large bowl and combine them. Cover the chicken evenly with the mixed spices.
Add 1 tbsp of olive oil into a large skillet and turn on medium-high heat. When oil is hot enough, place chicken thighs into the skillet. Fry chicken thighs in batches for about 8 minutes on each side, until golden well and no longer pink in the center. When you fry the second batch, you can add the remaining oil if needed. Transfer cooked chicken to a plate; set aside and cover to keep warm.
Add butter to the skillet, heat until melted, and add the mushrooms. Season with pepper and salt to taste and stir for about 3 minutes until the mushroom softens. Add the garlic and sprinkle parsley, thyme, and rosemary. Stir herbs for about 1 minute until fragrant.
