There’s nothing to this, really; after all, breakfast parfaits have been done millions of times. But I love this because it’s one of those ridiculously easy ingredient assemblies that turns into a fantastic, filling, nutritious breakfast that will start your day off on the right track. It’s packed with plenty of fiber & protein to keep you fueled for quite a while, and goes to show that in order to be healthy, there’s no need to sacrifice flavor. With just a bit of brown sugar & cinnamon to enhance the juicy sweetness of the peaches, this breakfast is as delicious as it is healthy.
Just a couple more things to note: I like my oatmeal a little creamier, so I use a combo of water and milk to prepare it. If you have issues with dairy, feel free to just swap out water for the milk and you’re good to go. Because the peaches end up making their own syrup with the sugar & cinnamon, I don’t feel it’s necessary to add more flavoring to the oatmeal itself while it’s cooking, but if you feel you need a little pinch of salt or something, feel free to add it. Don’t have time to make oatmeal from scratch? Just substitute a couple of packets of instant oatmeal, prepare according to the package instructions, and go from there. - 1-2 large peaches, chopped
- 1/2 tbsp brown sugar
